At Caviar de Terre we are on a mission to shine a light on those things we think are the "Caviar of Earth".  On the surface we produce and sell Fresh Australian Finger Limes, and associated products from Northern California, some of which you might not find anywhere else in the world.  Fresh fruit are available seasonally starting in Late October and ending usually in Early to Mid December depending on availability.  Packaged goods are available in Limited Quantities until sold out.  

We also aim to be a hub for access to some of the best products in the world, and will shine a light on products from various producers of super delicious offerings from Northern California.

DILL RANCH DRESSING Probiotic - 8 fl. oz.

This is a version of the first salad dressing we made.  As we learned about fermentation, vegetables didn’t always turn out the way we wanted.  Over-fermenting is common, and change is bound to happen, so we had to figure out a way to use products we couldn’t sell in a jar.  The solution - squishy cucumbers got pureed and upcycled in this dilly dressing.  We took that puree, turned it into a mayonnaise, added that to cashew cream and finished with chopped dill.  Enjoy our take on the classic ranch dressing.

Our probiotic Green Goddess is made with capers and our very own vegan worcestershire sauce to keep it vegetarian but retain that briny flavor you expect from this type of dressing.  With lots of fresh organic tarragon, chives and parsley, this dressing is perfect for any salad, and pairs especially well with seafood.

Of all the products in the collective cultures line, this is the one we are most impressed with because we’ve created a flavorful Caesar dressing without any of the traditional Caesar ingredients.  We’ve substituted flax and chia seeds for eggs, nutritional yeast and cashews for parmesan, and our own vegan worcestershire for anchovies.  You’ve got to try it to believe it!

SESAME GINGER All Purpose & Dipping Sauce Probiotic - 8 fl. oz.

This sauce “finishes” dinner.  Fermented ginger, onion, and garlic give this sauce it’s probiotics.  Use it as a marinade, dipping sauce, or turn it into a salad dressing by adding a little of your favorite oil to it.  Especially great on cold soba noodles with fresh veggies and herbs.

The great thing about this hot sauce, which makes it different from most, is that there is no vinegar.  It’s never been cooked, so it’s still raw, alive, and probiotic.  This is a naturally fermented sauce, so it’s a bit effervescent and more fruity than your traditional hot sauce.

With fermented ginger, onion, and garlic, this slightly spicy mayo gives any dish an upgrade in Asian flavor.  We were inspired by our traditional kimchi from our Golden State Pickle Works line, but wanted to keep it vegetarian with no fish sauce.  Use it as a spread, dip, or topping…the ideas are endless!

This is like an aioli on steroids.  There is a dish in France called Le Grand Aioli, where mayo is in the center and everything around is for dipping, which is our inspiration for this.  Goes great with roasted potatoes, poached prawns, grilles asparagus, and artichokes.  Also makes a delicious deviled egg!

We make this in the traditional way, no fermentation necessary.  It’s sort of a combination of whole grain and Dijon, as we use the mustard powder as well.

GSPW NAPA CABBAGE KIMCHI

We took the traditional kimchi recipe and amped it up by adding an insane amount of fresh garlic and ginger. Yes, we do peel the ginger by hand! We use a super high quality fish sauce that is only made up of fermented anchovies, which really creates a wonderful umami flavor. The small amount of sugar in our recipe is only there to balance out the spiciness of the Korean chili flake. Since we use traditional fermentation methods, this sugar is consumed by the natural bacteria giving our kimchi a truly authentic taste. Our Napa Cabbage Kimchi has won double gold awards at the Sonoma County Harvest Fair. We aren’t trying to reinvent the wheel, just putting our spin on it for you to enjoy.

The most classic sauerkraut we have.  The caraway lends a toasty layer that’s very nice.  It’s great with sausage, hot dogs, meat and veggie burgers, and cured meats.

These are the classic American Pickle.  The stuff at the store has so much sugar – we had to change the recipe.  We cut the sugar in half and use a combination of vinegars, making a crisp, light and refreshing pickle rather than a candied cucumber.

This product is produced from finger lime caviar extracted from fruit grown in Northern California, the Caviar is extracted from its natural vessel, and smoked in the smoke house to capture the alluring essence of smoke.  After that, it is promptly jarred in 100 gram jars and vacuum sealed which is approximately 100 servings.
