Maitake (Hen of the Woods), has both flavor and texture, making it my favorite to use in a variety of savory dishes. Its meaty texture is a great vegetarian/vegan substitute for meat in almost any meal. The strong, earthy flavor of maitake is rivaled only by the mighty morel mushroom. Aside from the culinary qualities, this fungus contains high levels of vitamin D, niacin, riboflavin, and potassium. It also lowers blood sugar and bolsters the immune system.

Wild Foraged Double Extracted Lobster Mushroom Tincture

The cauliflower mushroom is a rare treat. In Western North Carolina, their season is from June to October. It is rich in anti-properties, such as anti-tumor, anti-microbial, and anti-fungal—facts borne from extensive research done in the last 15 years. Packed with nutrients that improve the immune system and promote skin health, the cauliflower also has been shown to reduce the risk of strokes. Its proper name is Sparassis crispa, and rightly so, since it is rich in sparassol, a nutrient which is, again, wonderful as an anti-fungal and antibiotic.

Oftentimes this fungus grows to an unbelievably large size. It is rich in anti-inflammatory properties and also has great anti-tumor benefits.

The black-staining polypore is also known as "rooster of the woods," a cousin to both chicken and hen of the woods. It can be found at the base of hardwoods from May through October in the Southeastern United States. It contains methanol extract, which is very aggressive at fighting certain types of cancer. This polypore also is rich in vitamins and nutrients that lower blood pressure, lower cholesterol, help with digestion, and is rich in vitamin D.

Functional Mushrooms

Hoof mushroom is the common name of Phellinus linteus. I find it on dead or dying birch and beech trees in elevations above 3500 feet. Oftentimes it's overlooked in favor of more well-known medicinal fungi. Chinese culture has been using this immunity-boosting fungus for centuries. Hoof mushrooms also have polysaccharides and beta-glucans at levels that offer many health benefits, including lowered blood pressure, lowered cholesterol, and inflammation fighters.

Cordyceps are underappreciated fungi. The more research I do, the more I’m convinced that cordyceps have most of the properties I seek in better-known mushrooms. Two of its most compelling properties are the ability to slow the aging process and disease prevention. Other benefits are anti-inflammatory properties, specifically for the heart, and based on others’ research, a marked improvement in men's sexual dysfunction. Cordyceps is a great anti-viral and anti-fungal as well.

Birch polypore has been used medicinally for at least 5000 years. In 1991, German hikers stumbled onto a 500-year-old frozen, mummified man, wearing a birch polypore around his neck. Further examination identified a type of gastrointestinal bacteria that can be treated with birch polypore. The polypore has great anti-inflammatory properties, is proven to promote gut health, and offers neuroprotection against trophic stress. This fungus also produces specific acids similar to interferon, which is a strong antiviral medicine.
