Italian Oysters grown and dried at peak freshness at our gourmet mushroom farm.  The Italian oyster mushroom, also know as Phoenix Oyster or Lung Oyster, is a favorite among chefs.  The Italian Oyster has a beautiful brown cap and thick meaty flesh.  It is a delicious meaty mushroom with a mild and savory flavor.

These delicious Grey Dove variety of Blue Oysters are grown and then dried at peak freshness at our gourmet mushroom farm.  Grey Dove Oyster mushrooms have a mild earthy and meaty flavor and work great in any dish calling for dried mushrooms.  Great in pasta, soup, and rice dishes.

Wild foraged hericium abietis, commonly know as "Bear's Tooth" or "Bear's Head" is a relative of Lion's Mane (hericium erinaceus) that grows wild in the Cascade Mountains on conifer stumps. These mushrooms were wild foraged in Fall of 2024 and dried at peak freshness. Bear's head is a choice edible mushroom with a mild delicious texture and flavor. Comes in heat sealed 1 oz. packaging.

You Butter Bolete it - Because we can’t!

Now available for the first time at Half Moon Trading Company  are the rare and beautifully delicious Red Capped Butter Boletes!  (Butyriboletus primiregius).  

Sold throughout the world, this delicious bolete variety is now beginning to be found more often in North American venues who sell and specialize in choice edible culinary mushrooms.   

With its bright yellow flesh it’s no wonder this mushroom is commonly named “Butter Bolete”. This Mushroom has a nutty & earthy flavor similar to Porcini but with a firmer texture that has more tooth and meatiness than its little pig cousin. 

This mushroom is a wonderful addition to any sauce or topped on a burger or snacked on after grilled with butter!

Dried Butter Bolete - Butyriboletus Primiregius, Wild Oregon Harvest 2024

Wild foraged young Shaggy Mane mushrooms (Coprinus comatus). Foraged fall 2024 from the forests of Southern Oregon and dried to perfection. We dry only the youngest freshest of shaggy manes so that the dried product has minimal to no inking of the caps. A great mushroom to add umami to soups and risottos.
