This cheese is only produced in the season when the flora of our lush Maine pastures are at the peak of their diversity and abundance, as that is the time when our milk is perfectly suited to create a hard cheese of this style. The richness of the goat’s diet has a direct impact on this cheese, giving it a wonderfully complex aroma and flavor profile that ranges from toffee, toasted almonds and wildflower honey, to fresh herbs and caramel. Josh Pond’s Cave-Aged Esker Blue Esker Blue, made from organic cow milk, is smooth, spicy, and distinct in flavor. Encompassed in a natural, earthy rind, this cheese is aged 3-4 months below ground in our cheese cave. Deep blue veins are scattered throughout the wheel, and each bite leaves with a fresh creamy finish. Our seasonal cheeses are all handmade in small batches in the style of farmstead artisan cheesemaking. This cheese is made with the fresh raw organic cow's milk from our friends down the road at Tide Mill Farm. This is a fairly mild cheese that features a smooth and buttery texture thanks to the rich Winter milk that is used to create it. The flavors and aromas of this cheese tend to be nutty, buttery and delicately mushroomy. This versatile cheese is perfect on a cheese plate or a charcuterie board with a wide range of fare. Josh Pond’s Cave-Aged Meddybemps Meddybemps is a hard, Alpine style cheese made with certified-organic raw cow's milk. The cheese is cave-aged on wooden boards for 6-12 months; during which time its rind is repeatedly washed and brushed to slowly develop a complexity of flavors which become more pronounced as the cheese ages. The tastes and aromas are typically reminiscent of roasted hazelnuts, butter, and vegetable broth with a whiff of freshly cut hay.
