Lady Edison aims to shine a spotlight on traditional, sustainable long-aged, dry-cured Country Ham. Our hogs and hams are born, raised, harvested and processed by small independent farmers and processors in North Carolina. Each ham is the result of an unbroken chain of ingenuity, respect, and cooperation that has its roots in pre-industrial American agriculture where the specificity of the local climate and environment were integral to quality of the final product.
