A highly sought-after top edible mushroom, Chicken of the woods is excellent for beginner foragers. There are no real lookalikes, and the bright orange shelf-like growth makes it easy to see. Finding Chicken of the woods (Laetiporus sp.) is known to inspire wild chicken dances in the middle of the forest. With this dense, meaty textured mushroom, you’ll eat well for days.

This mushroom has a lemony, meaty taste. Some think it tastes like its chicken namesake; others describe the flavor as being more like crab or lobster. Whatever your opinion, the chicken fungus makes a great substitute for meat in almost any dish.

Next time you’re in the mushroom woods, don’t hesitate to pick some pheasant backs for the table—sliced thin, ground down, pickled, or sautéed, you’ll be sorry you ever passed them up.

Before you begin preparation, you should know the pheasant back mushroom does not taste like other mushrooms. Although it is a mushroom, it tastes more like a cucumber or watermelon rind. If this is your first experience with it, you should make sure your recipe is for the pheasant back mushroom. Otherwise, you will be surprised by the outcome.

(Cerioporus squamosus) Pheasant Back Mushrooms 1oz.

The Black King – also known as Shimofuri – mushrooms are a hybrid between Asian and European oyster mushrooms. They look like the huge King Oyster mushrooms and have a similar meaty taste. While King Oyster mushrooms grow individually, the hybrid grows in clusters like the Snow, Blue, and other oyster mushrooms.
Shimofuri is Japanese for “marbled”, referring to the pattern of the mushroom caps. They are whiter in the centre of the cap, transition to a large grayish-brown ring, and are a bit lighter around the edge, all while maintaining the beautiful marbled pattern.

Simply break apart the cluster of Black King mushrooms while keeping the stems – they are softer than the King Oyster mushrooms. Add to stir-fries, stews, rice dishes, pasta dishes, or pan fry and include as a side dish.

Chestnut mushrooms&nbsp;have long, crisp stems, much longer than cremini or button mushroom stems, and the entire mushroom, including the stem, is edibleChestnut mushroom's scientific name literally translates to "fat with scaly cap." It has a long history of use in East Asian medicine.Lion's mane mushroom might improve nerve development and function. It might also protect nerves from becoming damaged. It also seems to help protect the lining in the&nbsp;<a href="http://www.webmd.com/digestive-disorders/picture-of-the-stomach" rel="noopener noreferrer" target="_blank" style="color: rgb(24, 122, 171);">stomach</a>. Snow oysters are one of the best edible mushrooms. The caps can be huge and can be found 9 inches across when mature, though 4 - 6 inches is more common. They have a super-dense, meaty texture.﻿Snow oysters fare well in any kind of cooking. They can be simply seasoned and oven-roasted or grilled. When sauteed, they cook down quite a bit, but they also crisp and caramelize in an absolutely delightful way.

Most people will go their entire lives without ever seeing a pink mushroom.So if you’ve found a pink oyster mushroom or are planning on growing them, you should consider yourself lucky!Pink oyster mushrooms are&nbsp;best suited for cooked applications such as sautéing, boiling, roasting, or frying. (Agrocybe aegerita) Pioppino mushrooms grow on decaying tree stumps or beneath popular trees, this mushroom is a popular food ingredient in both Asia and southern Europe. Also known as Black Poplar mushroom named from its growing habitat around poplars, the Pioppino develops a light brown colored cap sprouting from a thin white stem. Rings of the fungus membrane surround the stem and eventually fall to the ground as spawn. Firm in texture, the Pioppino provides a mildly nutty flavor when cooked and can be added to complement a variety of rice, risotto, and meat dishes.

Pleurotus citrinopileatus, the golden oyster mushroom, is an edible gilled fungus. Native to eastern Russia, northern China, and Japan, the golden oyster mushroom is very closely related to P. cornucopiae of Europe, with some authors considering them to be at the rank of subspecies.

Organically grown blue oyster mushrooms. These make a great addition to soups. Like other oyster mushrooms, blues are among the fastest fruiting mushrooms out there and when conditions are right clusters can double in size within a day or two! As the name suggests, their main distinguishing characteristic from other members of the genus is their striking blue color which starts of as a deep blue during pinning and turning to a smoky grey as the mushroom matures. These mushrooms can be easily grown inside but are particularly well suited to outdoor cultivation as they require a high level of fresh air exchange.&nbsp;However, like other members of the oyster family they are very prone to insect infestations including gnats and beetles so depending on your site, you may need to keep an eye on them and harvest relatively quickly after they start to fruit.

Sassafras albidum&nbsp;is an important ingredient in some distinct foods of the US. It is the main ingredient in traditional&nbsp;<a href="https://en.wikipedia.org/wiki/Root_beer" rel="noopener noreferrer" target="_blank">root beer</a>&nbsp;and sassafras root tea, and ground leaves of sassafras are a distinctive additive in&nbsp;<a href="https://en.wikipedia.org/wiki/Louisiana_Creole_cuisine" rel="noopener noreferrer" target="_blank">Louisiana Creole cuisine</a>.
