Yeah, they are rare in these parts, but we found some- woot!!
So, for those of you who have never had the pleasure, here is what I can tell you about the Russels bolete:
These have a really mild flavor compared to many in the bolete family. The texture is soft when rehydrated. Unlike some boletes, both the cap and stem of this mushroom is edible and has the same flavor and texture throughout.
This doesn't make the greatest mushroom for stand alone dishes as the flavor is so mild, however it makes a fantastic addition to soups and stews as it absorbs fats and oils well. This lends to a wonderful blend of consistency in your meals.
