Tuber oregonense, known as the Oregon Winter White Truffle, is native to the Pacific Northwest of North America, ranging from northern California to British Columbia, and is commonly found in Douglas Fir forests. They are prized for their umami-like and potent truffly or slightly garlic or diesel aroma.

This white truffle is prized for its intense aroma and is used sliced, shaved, or grated over pasta, risotto, vegetables, or eggs and also used to infuse butter, oils, and meats.

Oregon winter white truffles are found from November through March. These are harvested from our private forest stands in Washington & Oregon where we work with small timberland owners to keep the land in working forests.

Oregon White truffles range in size but are normally on the small side, ranging from the size of a pea to a golf ball. We do occasionally find 'icon' size Oregon white truffles in excess of 2 ounces (about 60 g +). If you are interested white truffles of this size, please contact us directly to be notified when they are found.

These truffles are all considered EXTRA CLASS BUT SMALL, and all are found by our dogs. Every one. That's super important to us as it ensures quality as well as sustainability. Beware- not everyone who says "dog harvested" actually does!

These truffles range is size from a dime to maybe a Nickle or a bit larger. They are great for chopping up, infusing, or anything you can think of. They are still big enough to grate or shave (watch those fingertips!), but are on the smaller size and therefore more economical. The aroma is NOT impacted by Size.

Truffle Dog Co specializes in the harvesting and sale of truffles! We focus on truffles species Native to North America (such as Oregon white and Oregon Black truffles) as well as work with small farmers in select locations (domestically in the US) and with our partner farms across Australia, Chile, and Europe.
