Honey mushroom season is here!
Fresh honey mushrooms gathered in the forests of Rhode Island and Massachusetts. Honey mushrooms are known to have a sweet and savory flavor. They are delicious in casseroles, dumplings, and other savory dishes. These mushrooms must be thoroughly braised, stewed, or roasted for at least 10 minutes before they can be properly digested. As far as health benefits go in mushrooms, honey fungus are unbeatable. They are rich in anti oxidants and contain armillarikin, a compound that has been shown to kill cancer cells. Research has also suggested they improve neuron function by decreasing the proteins in the brain associated with Alzheimer's disease. In another study, honey mushrooms were shown to decrease blood sugar. *As with all wild mushrooms, if it's your first time trying them we recommend you start with a small serving to ensure you don't have an allergy you weren't aware of. *By the time you receive your mushrooms, they may be a tad dry. This is normal for fresh mushrooms. You can submerge them in boiling or very hot water for 20-30 minutes to plump them up.
