Once a year, we take a great trip to Minnesota to seek out the most abundant lakes of wild rice. Long hours are spent in the canoe pushing through the water to collect the bounty of this plant. It is then dried, parched, danced, and winnowed, to create a beautiful, clean grain. We mill this into a fine flour that is incredible in baked goods and pastries that adds a nutty flavor that is so complex it can't be put into words. Because it lacks many binders, we enjoy baking with this by replacing around 25% of the all purpose or bread flour in our favorite recipes with our small batch wild rice flour. Try some for yourself!
