Burgundy Truffles (tuber uncinatum) grow from September-early December in the southern region of France. Their aromatics are milder to their winter cousin, the black winter truffle, however they have an extremely nice delicate nutty flavor and musky aroma. Shave over your dishes after they are done cooking, do not cook this truffle. Great on pastas, poultry or meat, risotto, egg dishes, potatoes, etc. Do not wash truffles. To clean them, use a soft brush. Use the whole truffle.
