Due to their growing environment, the moisture content of your chanterelles may vary. Some may be wetter, especially if there's rain on the coast, while others may be drier, depending on the coastal conditions. As a result, we encounter fluctuations from day to day, and currently, the chanterelles may appear brown around the edges and not visually perfect. Nevertheless, rest assured, they still possess a wonderful taste!

Typically, starting from mid-November, chanterelles tend to be wet, and there's little we can do to prevent this. We strongly advise against washing the chanterelles, as they absorb water easily and may become waterlogged. Instead, use a soft brush to gently remove any debris from your chanterelles.

As the chanterelles grow larger, they become more brittle, leading to some breakage during transit. Although we strive to minimize breakage, it's challenging to prevent entirely.

Upon receiving your mushrooms, ensure to place them in the refrigerator promptly. If the moisture content is high, you can wrap the chanterelles in paper towels and then in a hand towel to absorb any excess moisture. The shelf life of chanterelles is approximately 5-7 days. Be vigilant and check them daily, as if one mushroom goes bad, it can quickly affect the others. Signs of spoilage include browning or sliminess; please note that sliminess differs from natural wetness. Additionally, watch out for any mold growth, which will be evident through black spots or green mold. In such cases, be sure to discard the affected mushroom immediately.
