We have for market our 2024 offering of Hoshigaki - Japanese Style Dried Hachiya Persimmons. Hoshigaki are made with a laborious process that entails selectively harvesting Hachiya persimmons at peak time. This tannic unedible raw fruit is then prepared traditionally with a centuries old technique. Each fruit is washed, peeled, and meticulously hung to air dry for a period of 5 to 6 weeks, each day inspecting and massaging to break up the fruits center. This specialized care causes the fruit to transform into another entity, one whose flesh is able to take your palate on a journey where the flavor dances around the mouth inviting you to ponder how this is even happening. The crystallized "sugar bloom" that coats the outside is not a mold, but a gental expression of the fruits intent. The sweet sugar bloom has the taste of powdered sugar when it hits the tip of your tongue. Enjoyed sliced and eaten as a dessert, used to make specialty vinegars, sliced to top a well crafted hor d'oeuvres, paired with a ripe cheese. Hoshigaki is much like crafting wine, many different styles and the vintage of each year brings it own magic combination of flavors. We hope you enjoy this year's offering!!!
