- 1 large ripe dragon fruit, peeled and cubed
- 1 cup full-fat coconut milk
- 1/2 cup heavy cream
- 2 pastured egg yolks
- 1/2 cup granulated sugar
- 1 teaspoon organic vanilla extract
- 2 tablespoons lime juice
- A pinch of sea salt

Preparation:

Step 1 - Beat Egg Yolks and Sugar

In a large bowl, beat the egg yolks for 2 minutes. Add sugar and continue beating until the mixture is light and fluffy.

Step 2 - Whisk Milk, Cream, Vanilla, Lime Juice and Salt

In a saucepan, combine coconut milk, heavy cream, vanilla extract, lime juice, and sea salt. Heat over medium heat until it reaches a mild boil, whisking constantly. Remove from heat and let the mixture cool to room temperature.

Step 3 - Puree Dragon Fruit

Puree the dragon fruit in a food processor until smooth.

Step 4 - Combine Puree and Milk Mixture

Gently fold the dragon fruit puree into the cooled milk mixture. Refrigerate the mixture for at least 2 hours, or overnight for best results.

Step 5 - Churn Mixture

Churn the mixture in an ice cream maker according to the manufacturer's instructions.

Step 6 - Transfer Ice Cream and Serve

Transfer the ice cream to a freezer-safe container and freeze for at least 4 hours, or until firm. Let the ice cream sit at room temperature for 10 minutes before serving for easier scooping.
