INGREDIENTS:

Enchanting Ramp Pesto Recipe
- 2 cups fresh ramp leaves
- 1/2 cup fresh basil leaves
- 1/3 cup pine nuts, lightly toasted
- 1/2 cup freshly grated Parmesan cheese

Preparation:

Step 1 - Wash ramps

Wash the ramp leaves and basil thoroughly to remove any dirt or debris. Pat them dry with a paper towel.

Step 2 - Toast pine nuts & grate cheese

Toast the pine nuts lightly in a dry skillet over medium heat until they're golden brown, ensuring they don’t burn. This should take about 2-3 minutes. Set aside to cool. Grate the Parmesan cheese finely and set aside.

Step 3 - Combine ingredients

In the bowl of a food processor, combine the ramp leaves, basil, cooled pine nuts, and garlic. Pulse the mixture several times until coarsely chopped.

While the food processor is running, slowly drizzle in the olive oil until the mixture becomes smooth and well-combined.

Transfer the mixture to a bowl and stir in the grated Parmesan cheese.
